Vegan Burger

– The ultimate classic redefined with tomato jam, onions, arugula and gherkins.

The burger is the all-time classic when it comes to American fast food. Usually served with ground meat it can be fairly unhealthy and greasy, especially when served with fries. With this recipe we try to adapt this iconic dish with a few modern and delicious twists. This burger recipe is vegan friendly and adds a few usually uncommon ingredients to make this on of our favorite burgers. We wish you a fun time in the kitchen and trust us, it’s worth the effort!

Ingredients (4 servings):

Patties:

  • 400g of canned black beans
  • 1 garlic clove
  • 2 small onions
  • 1 Tbsp. tomato paste
  • 2 Tbsp. soy sauce
  • 3 Tbsp. English mustard
  • 3-4 Tbsp. fine oats

Tomato Jam:

  • 2kg tomatoes
  • 400g brown sugar
  • 2 tsp. ground coriander
  • 2 tsp. ground cumin
  • 1 lemon, juiced

Toppings/Buns:

  • 1 pack of fresh arugula
  • 4 gherkins
  • 4 vegan burger buns
  • Oil
  • Salt and pepper
  • Optional: 4 slices of vegan cheese

Preparation:

Patties:

First rinse the black beans with fresh water then smash the beans with a fork. Finely chop the garlic and the onion and add them to the bean mixture. Lastly add the tomato paste, soy sauce, mustard and oats. If your dough seems to sticky, you can add flower to bind it. Now form 4 evenly sized patties. Fry them over medium heat in vegetable oil until golden brown and crispy. If you want to add cheese, add it on top after the first flip so it has enough time to melt.

Tomato Jam:

Dice the tomatoes into cubes and squeeze the juice of a fresh lemon. Add all ingredients to a saucepan and cook over medium high heat for about 10 minutes, afterwards reduce to medium heat and let it simmer for an additional 20-30 minutes. In the end it should have a sticky consistency. If there is too much jam for the burgers themselves, store it in a glass jar and use it instead of ketchup for other meals, it’s delicious.

Toast your buns according to the package or lightly brown them in a non-stick pan. Now, it’s almost time to assemble your work. You can let your creativity run free. Gherkins and onions on top or bottom, diced or sliced, it is your choice. Don’t forget to add the fresh arugula.
